Fish Tacos with Cilantro Lime Sauce Recipe

Hello there! The other night Madison made me such a great dinner I asked him if I could share the recipe here. Luckily for you, he said yes. I am not much of a cook so whenever Madison cooks for me from scratch with no recipe I am always impressed. This particular time is was a fish taco with a cilantro lime sauce he imagined up. Delicious! I'm filing this under Hello Fitness healthy recipes because he used salmon and avocado- two foods that are very good for you.

Fish Tacos with Cilantro Lime Sauce

Ingredients

For the taco

1 piece of salmon (we used a salmon burger)
1/2 of an avocado
1 slice American cheese
3 small corn tortillas

For the sauce

1/2 cup mayonnaise
Juice of 1/4 of a lime
2 tablespoons roughly chopped cilantro

Directions

Pan sear the salmon with a little oil until fully cooked. Place one of the tortillas on a plate and assemble the taco with a slice of avocado, 1/3 of the salmon and a small piece of cheese. If you would like the cheese melted, you can place you plate under a broiler for a minute. To make the sauce, pour the mayonnaise into a small bowl and whisk in the lemon juice and cilantro. Spoon a generous portion onto your taco. Repeat the process with the remaining two tortillas.

Makes 3 tacos.

Enjoy!
